Ok so my theory about witches vs. demons is this:
1.) Witches share a common ancestor with modern humans. Idk how far back but they do. Maybe when the first Titan died and it’s blood spilled everywhere (or something idk) it accidentally transported a bunch of humans there? But whatever that’s not important.
2.) So bipedal demons have bile sacs and so do witches, which is a weird thing to co evolve even in a fantasy world with fantasy biology.
3.) Some witches have extra features like a third eye (Boscha) or tail (Illusion Coven Head) and THREE characters (2 witches + 1 bipedal demon from S2.1) have demonstrated the magical ability to put limbs back into place after falling off.
4.) Im convinced that witches are the many-generations-ago descendants of human x bipedal demon hybrids, and the bloodline eventually formed around a general humanoid body plan that also had demon features like a bile sac, pointed ears, weird limbs, and sometimes other body parts. And I think hybridization is less wild and hard to believe than the co-evolution of bile sacs, yes. Magic reproduction just feels more believable and simpler to me than conveniently co-evolving the exact same organ.
5.) I really think this is a good explanation for why witches have both demon heritage traits yet are not treated as bipedal demons, and also look so strikingly human but are still definitely not humans.
